It is weekend again and it is 'cooking time' for me ! This time around, I decided to try on some homemade mushroom soup. The hubby loves the fresh mushroom taste and smell and will never fail to order one if we were to eat out. Well, since he loves it so much - let's make this as part of my 'to cook bucket list'.
Main point of referal would be YouTube ~ we must admit that the site has anything and everything under the sun- be it music, cooking lessons, DIY and etc etc. It is like a video wiki to all of us. Anyhow, I managed to browse thru a few clips and gathered the required steps and ingredients. So, off we went to Jusco on Friday and got some milk, fresh shitake brown mushroom and some thymes. Kept it cool overnight so that I can prepare it the next day.
Morning came and started cooking. Firstly, cut and cook the mushroom . Saute it for about 10-15 minutes with a pinch of salt, butter and olive oil. Bring to boil till water agak agak kering.Once done, add in garlic and onion and saute again. Medium low heat and then add in chicken stock & milk. Simmer it for another half an hour and add in thyme (optional). Bring to boil and once all ok, transfer it to the blender & blend it thoroughly. Transfer it back to the pot and add in milk (my version), dry herbs and taste it. If all good, serve hot !
Hubby loves it but there is still the smell of the fresh thyme which indirectly made the soup a bit weird. Hahaha..maybe not so 'ngam' with our Asian taste.....
Voila - here you go - our weekend brunch with homemade shitake mushroom soup. Also, made jelly as dessert for lil boy.
